Roasting grape tomatoes is a great way to bring out their sweetness. Grape tomatoes pack a punch of nutrients into your diet. You can find grape tomatoes in the produce department year round. Cherry tomatoes can also be used in this recipe but can be harder to find when not in season. You can enjoy these roasted grape tomatoes straight out of the oven or you can get creative. I’ve used them in bruschetta and skewered with mozzarella, no matter how you serve them up they will be a delicious addition to your meal preparations. Roasted grape tomatoes can be used as a side dish and will complement a brunch or dinner entrée.
Ingredients
- grape tomatoes – 1 pint
- 1 tablespoon butter
- Italian seasoning to taste
- Parmesan cheese to taste
Directions
- Place tomatoes in a 9×13 glass baking dish
- Melt butter and pour over tomatoes
- Sprinkle with Italian seasoning
- Sprinkle with Parmesan cheese
- Preheat oven to 350 degrees
- Bake for 25 minute
*Do not over bake, this will cause the tomatoes to burst
