Pineapple upside down cake baked in a cast iron pan!
This was a new trick for me, I never baked a cake in a cast iron pan. I was so happy it worked out great! I used a box cake mix but you can use a basic yellow cake recipe. The cast iron pan makes an ordinary pineapple upside down cake extra special and the jewel is in the topping! Such sweetness!
Ingredients
1 can sliced pineapple
1 small jar maraschino cherries
1 cup brown sugar
3 tablespoons butter
1 box mix of pineapple upside down cake
3 large eggs
1 cup water
1/3 cup vegetable oil
Directions
Preheat oven 325 degrees
Place pan in the oven while it is preheating
In a small sauce pan put brown sugar, butter and 1/2 cup of juice from the canned pineapple slices
Mix gently
Heat just until the butter is melted
Put the pineapple slices on the side for now
Prepare cake mix according to instructions
Remove pan from oven when it is good and hot
Be Careful!
Pour the sugar mixture in the pan
Arrange pineapple slices in the pan- be as creative as you like
Next use the cherries to decorate the pineapple slices
Pour cake batter on top
Put in the oven for 30 minutes (when toothpick inserted comes out clean)
Let cake set for a minute or two
Flip on serving tray
When you flip Be Careful
Let the pan sit for a minute until it releases
It will be slightly gooey and drippy
Remember hot sugar is Hot! Be careful!
