This Babka recipe was given to me by extended family. When I searched for more information I discovered babka to be more of a bread. This recipe is either Polish or Lithuanian. Prepared with grated potatoes, onions and eggs, it resembles a type of potato casserole. While looking for information, I came across recipes for Lithuanian kugelis. My recipe closely resembles kugelis.
Babka is a European style potato dish that makes a great side dish or main entrée. It is well-formed and can be cut into serving squares. Add this dish to your recipe collection!
Ingredients
- 7 potatoes
- 1 large Onion, diced small
- 1 cup flour
- 3 eggs, beaten
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon butter
- 1 tablespoon oil
Directions
- Spray a 9×13 casserole dish with cooking spray
- Peel potatoes and soak in cold water until ready to grate
- Saute onions in butter and oil, brown lightly
- Grate potatoes
- Mix all ingredients together
- Pour mixture in casserole dish
- Bake at 400 degrees for 1 hour
