I love this meal, it is quick and easy to prepare. This can be a main entrée or side dish.
Feel free to substitute the angel hair pasta with your favorite kind of pasta. I’m just partial to angel hair, it creates a lighter meal. I’ve been told perception is reality. That works for me 🙂
During Lent, I always struggle to create meals without meat. I find myself staring into my pantry or opening and closing the freezer. When I draw a complete blank that’s when I decide maybe we should just have cereal. This recipe saves me on those days I swear no meal can be prepared without meat.
Pasta and spinach, two of my favorites come together in a heaping bundle of joy. Enjoy!
